Hello Everyone! 

Someone once asked me, what's the most difficult part in baking the perfect macaron? 

When I think about it, the mixing of the meringue with the tant pour tant (icing sugar and almond meal mix) would be the trickiest. It is so easy to over mix or under mix.

If it's over mixed, then the resulting batter will be too runny. This means that when it's piped, the result would be a flat macaron instead of a lovely domed shaped one. 

If it's under mixed, then you get a macaron that's has a very pointy tip. 

So how do you know when you've mixed it enough? 

When you lift up the batter with your spatula, the batter should flow back down like molten lava. The batter should also look glossy. 

Trial and error! Don't be afraid to dive in and give it a go!

Hello!

Autumn is definitely here! Staying in, baking and cooking is just perfect fo this time of the year. 

When baking macarons, the drier atmospheric air means your macarons take less time to dry and be ready for the oven. 

A top tip for getting your macarons just right is to make sure you put your icing sugar and almond meal  in a blender and blend for around 8 minutes. This ensures a fine and even mix. After this, pass through (icing sugar and almond meal mix) a sieve. 

By doing this, your macarons will have a smooth beautiful surface.

When is the best time to bake macarons? November 8, 2015 18:54

As much as I'd like to say anytime is a good time to bake macarons...truth is, don't even try making them when it's a humid day.

A humid day will not allow your piped macarons to dry properly before they go in the oven. And if the top of the piped macarons hasn't formed a crust, then your macarons won't have that beautiful "feet". Worse still, the top will be cracked. 

So I always check weather forecast when planning when to bake!

Hello Everyone! 

It's a glorious Saturday morning and I am doing my favourite thing in the world - baking a big batch of macarons for wedding bomboniere. My bride has requested choc mint macarons. I will post photos once they are ready. 

This is got me thinking that every home baker should give macaron making a go! 

Here's my tip - make sure you allow the piped macarons to dry properly so that it forms a dry crust before baking. This will give your macarons those lovely "feet" and prevent the tops from cracking.

Hello Macaron Lovers,

I've had the best day creating the perfect filling for my Passionfruit Macarons! The filling is just the right blend of sweet and tart. I've added almond meal to the filling to give it that extra lightness. 

When you first take a bite, you get the lovely chewiness of the purple macaron. Then the sweetness comes in, followed by the unmistakeable Passionfruit taste! Oh Bliss!

I recently made some champagne coloured macarons. I've always wanted to use edible gold dust and this time, I brushed gold dust on the champagne coloured macarons! The effect was incredible! The gold dust highlighted the champagne colour and gave it that added touch of class!

It has been awhile since my last blog post as I've been flat out filling orders. It is that time of the year!

Just delivered a big corporate order. My client wanted her corporate colours made as macarons. I packed two macarons in a clear transparent cube and made it perfect as Christmas gifts by tying it with Christmas themed satin ribbon.

It was a pity I forgot to take a photo of the order to share with you. They looked great and definitely are perfect as gifts.

I will ill be taking orders until 20th Dec for Christmas delivery.

Hot Sugar Sydney New Macaron Flavours October 30, 2014 05:53

We've been busy developing new macaron flavours in time for the festive season. 

The first one came about from a customer's request. It is a bright orange macaron filled with orange chocolate ganache. It tastes great as orange and chocolate goes so well together. 

The second one is perfect for Christmas occasion or as gifts. The macaron will be made up of one Christmas red shell and one Christmas green shell. It will be filled with raspberry white chocolate ganache. The result is a macaron that is not only delicious but perfect for Christmas.

I will be posting photos of these new macarons very soon.

Macarons are delicious and so moreish! It is hard to stop at just one! 

For those of you who would like to try making them at your home, here's a top tip. 

Before you do anything, get to know your oven. Buy an oven thermometer. 

It is an inexpensive purchase. Use it to determine the actual temperature of your oven. 

For example, set it to 200 deg C, place the oven thermometer inside and check the reading. 

By doing this, you can make sure your macarons will be baked at the right temperature. 

Good luck! Practice makes perfect.
